No Bake Chocolate Eclair Dessert ~ Quick, Delicious, Easy

No Bake Chocolate Eclair Dessert is  simply delicious. This recipe has been around for quite a while. If you love chocolate eclairs or Boston Cream Pie you will love this dessert.  It is a quick and easy to prepare recipe that can easily be made the night before to have ready to serve when needed for company or holiday meals. It seems like you are making a big dish, but not to worry because No Bake Chocolate Eclair Dessert is scrumptious and vanishes in a hurry. This is one of the easiest most delicious recipes. There is no cooking involved here other than a few seconds in the microwave. If for some reason you don’t use a microwave you can always melt the frosting in a metal or heat resistant bowl over a pan of boiling water. Here is what you will need to make this No Bake Chocolate Eclair Dessert:

No Bake Chocolate Eclair Dessert

1 box graham crackers
2 small (3-oz) packages instant vanilla pudding mix
3 cups milk
1 container (8 oz) frozen whipped topping, thawed
1 container chocolate frosting, 16 oz

INSTRUCTIONS: 

  • In a large bowl whisk milk with both boxes of pudding mix.

No Bake Chocolate Eclair Dessert

  • Add the container of whipped topping, stirring to mix well
  • Spray the bottom of a 9×13-inch pan with nonstick spray and line with graham crackers.

  • Pour half of the pudding mixture over the graham crackers.

  • Add another layer of graham crackers and top with the other half of pudding.
  • Add one more layer of graham crackers.

  • Remove lid and all of the foil top from the frosting container. (be sure to not leave any foil behind)
  • Melt frosting in microwave for 45-60 seconds.
  • Stir and pour melted frosting evenly over the top of the dessert.

  • Refrigerate for a few hours or more until well chilled (overnight works well)
  • Serve and Enjoy!

Yummy Yeast Rolls ~ Bread Machine Dough

You’ve got to try these yummy yeast rolls using bread machine dough! These rolls are so easy to make and so delicious they have quickly become a regular here at our house. I am making a batch right now while preparing this post to be sure I have plenty to share with family and friends on Thanksgiving Day and will be having them again as the rolls with our Christmas Dinner. The hardest thing about these rolls is trying not to gobble them up as soon as they come out of the oven! The hard work is done in the bread machine but family and friends will think you have slaved over these!

For a tastey little variation, you can baste these yummy yeast rolls with melted butter and sprinkle with garlic salt and a little Parmesan cheese right before baking, but they are delicious with just butter on them. To add a little extra pizzaz you could  always add a little parsley or minced garlic to the melted butter when making them as dinner rolls. These yummy yeast rolls make great dinner rolls.. or make the rolls bigger and use them for sandwiches.  If you divide the dough into 20 – 24 rolls they are small dinner rolls… dividing into 12 – 15 makes large rolls that are perfect for small sandwiches. These will be perfect to use for Turkey sandwiches with the Thanksgiving or any holiday dinner leftovers.

Here is what you will need to make this Yummy Yeast Rolls Recipe:

  • ½ cup warm water
  • ½ cup lukewarm milk
  • ¹⁄³ cup melted butter
  • ¹⁄³ cup sugar
  • 1 egg (room temperature, or warm in a glass of warm water for a minute)
  • 3 ¾ cup flour (bread flour works best)
  • 1 teaspoon salt
  • 1 package active dry yeast (2 ¼ teaspoon)

INSTRUCTIONS: 

  • Place all ingredients in the bread machine in the order listed above.

  • Run the bread machine on the dough cycle.

  • When the machine is close to being finished spray at 13×9 inch pan with cooking spray.
  • Flour your cutting board or baking mat.

  • Melt about 4 tablespoons of butter for basting over the top
  • When the bread machine is finished place the dough on your floured surface.
  • Separate into 20 – 24 equal parts and shape each one into a ball. (12 if you prefer bigger sandwich rolls)
  • Place the dough balls seam side down on the prepared pan. Balls should not be touching so they have room for their final rise.
  • Brush each one with a little melted butter, using about half of the butter you melted.

  • Let these uncooked yummy yeast rolls rise in a warm draft free area for about 45 minutes to an hour. (Hint: I warm my oven slightly while I separate the dough. I then make sure the oven is off and not too hot and  I place my rolls in for their final rise before baking.)

  • Preheat oven to 375 degrees.
  • Bake rolls for about 16-19 minutes until the tops are golden.
  • Remove from oven and brush the tops with the remaining melted butter. (I often end up melting a little more if I’m in a buttery mood and make sure to coat the tops as well as allow butter to soak into the grooves between each roll. Definitely not low cal, but delicious!)

Chicken And Peppers ~ Frugal One Pan Meal

Chicken And Peppers is a frugal one-pan meal recipe which can be made with a few simple ingredients in under an hour from start to finish. The peppers and seasoning give the chicken a potatoes wonderful flavor.  The chicken skin and potatoes come out nice and crispy in spots adding to the texture and flavor of this dish. The quick and easy sauce made with a little mayo, garlic and smoked paprika is a great finishing touch. I love to make chicken and peppers on busy days when I want to serve my family a good meal, but don’t particularly feel like dirtying a bunch of pots and pans. This is also one of those dishes in which if you want leftovers you better make a double batch. My guys don’t leave anything behind when I make chicken and peppers.

I make many variations of this recipe depending on what I have on hand in the pantry and freezer. I used a bag of chicken wings I picked up on sale this week, but you can use any chicken parts you like for this recipe. If using breasts be sure to cut them in half so they cook through. I sometimes use a bag of mini sweet peppers (cut in half lengthwise) instead of the bell peppers. Sometimes I even add a sliced onion to the mix. I find that 450 degrees is that perfect oven temperature to get the chicken done through and give a wonderful crisp browning for the chicken and potatoes. Here is what you will need to make this Chicken and Peppers Recipe:

2-3 pounds cut up chicken pieces (I used wings in the pictures this time)
2 Bell peppers any color, chopped
4 -5 medium size potatoes, thinly sliced
1 teaspoon ground black pepper
1 teaspoon seasoned salt
½ teaspoon smoked paprika
½ teaspoon garlic powder
2 tablespoons olive oil

For Sauce:

  • ½ cup mayonnaise
  • ½ teaspoon smoked paprika
  • 1 garlic clove, minced

INSTRUCTIONS:

  • Preheat oven to 450 degrees F.
  • Line a large baking sheet with foil and spray with cooking spray.
  • Toss chicken pieces, peppers and potatoes in a bowl with all the seasonings and oil.
  • Pour out Chicken mixture onto the prepared baking sheet.

  • Place in preheated oven and bake for about 35-40 minutes until done and nicely browned.
  • Serve with Garlic Paprika Mayo. (Combine 1/2 cup mayo, 1/2 teaspoon smoked paprika and 1 minced garlic clove).

Melting Snowman Sugar Cookies ~ Fun Holiday Treat

Melting Snowman Sugar Cookies are so much fun to make and to eat. My friend Michelle showed me these cookies and I fell in love with them.  These are so cute and festive for the holidays. They taste pretty good too. All you need to make these cute cookies is sugar cookie mix or your own favorite homemade recipe for them, powdered sugar, vanilla, a bag of marshmallows, cooking spray, and a few different color icings with icing tips. As you can see in the pictures ours are not perfect, but that is the fun of making these cookies. Everyone can participate making their own version and they are still adorable. Some of my cookies got a little extra tan around the edges, but they were delicious and that just added character to the snowmen.

Here is what you will need to make these Melting Snowman Sugar Cookies:

  • 1 Package Sugar cookie mix or your own homemade recipe
  • 10-12 marshmallows
  • Cooking Spray
  • An assortment of icing and decorating gel, your choice of colors and textures
  • ¾ cup powdered sugar
  • 2 tsp milk
  • ½ tsp clear vanilla
  • 1 tsp light corn syrup

Prepare your cookie dough as directed on the package or as you normally do with your own homemade recipe. Form balls with the dough and flatten into about 1/4 inch thick rounds so they are a little uneven. Remember you are making melting snowmen, so you want them to be a little off looking. Bake as directed on package. Place on wire rack to cool completely.

Melting Snowman Cookies

  • Mix the  ¾ cup powdered sugar, 2 tsp milk, ½ tsp clear vanilla, and 1 tsp light corn syrup together and drizzle over the cookies allowing a little to run over he edges for the melting effect.

  • Spray a microwave safe plate with cooking spray.
  • Place marshmallows on the plate and microwave for 13-18 seconds just until starting to puff.
  • Remove from microwave and place one on each cookie, you can squish and position any way you like them.

  • Get your icings and gels out and have fun. Remember you cannot mess them up because they are melting so should look a little messy and have their own personalities.

Chocolate Saltine Toffee ~ Delicious and Addictive!  Don’t think this is an exaggeration. This is one of those treats that will keep you reaching for more and wishing you made a double batch. Saltine Cracker Toffee is an old recipe that has been around for as long as I can remember. My grandmother used to make it for us. I can remember catching a whiff of that wonderful toffee smell when getting close to home and knowing what was going to be waiting when I got there. Chocolate Saltine Toffee is super easy to make. The hardest part is trying not to eat it all as you go.

Saltine Cracker Toffee is a pretty frugal recipe to make from just a few basic ingredients most of us have in our kitchens. Of course you can get creative and add whatever you like to dress it up a bit. We like them just plain or with chocolate and nuts on top. It just depends on how much time and creativity you would like to invest in these delicious treats. These were made with chocolate and toasted almonds which is my favorite version. They are also great with pecans and white or milk chocolate baking chips. In place of the crackers you can use Chex cereal, corn flakes or graham crackers. We love toasted almonds, so I toast my own almonds to put on top by laying them flat on a cookie sheet and placing them in the oven at the same time I do the cracker toffee mixture, but you can buy them already toasted or even just use them as they come.

Here is what you will need to make thie Chocolate Saltine Toffee Recipe:

40-50 saltine crackers
2 sticks butter, chunked/sliced
1 1/4 cup light brown sugar, packed
1 cup almond slices
2 cups chocolate chips, dark or milk chocolate

INSTRUCTIONS:

  • Pre-heat oven to 350 F.
  • Line your jellyroll pan with foil and give it a quick once over with cooking spray or butter it.
  • Line the pan with saltine crackers.

Chocolate Saltine Toffee

  • In a medium size saucepan over low heat melt the butter and brown sugar.

Chocolate Saltine Toffee

  • Increase heat to medium and bring to a boil.
  • Boil for 3-4 minutes stirring until mixture turns golden and thickens.
  • Pour as evenly as possible over the crackers and spread. It does not matter if it is perfect.

Chocolate Saltine Toffee

  • Place in preheated oven for 6-7 minutes.
  • While in oven melt chocolate in a small bowl or double boiler.
  • Remove Crackers from oven and pour the chocolate over them, spreading evenly.

Chocolate Saltine Toffee

  • Sprinkle the toasted almond slices evenly over the top of chocolate layer.

Chocolate Saltine Toffee

  • Sit the tray in the fridge for about an hour to cool and set.
  • Remove from fridge and break into pieces.
  • Serve and Enjoy!

Quick and Easy Carrot Salad Recipe

This  Quick and Easy Carrot Salad Recipe is one of my favorite oldie but goodie recipes. If you are from the south you have probably had this salad many times. It is the perfect combination sweet, but not too sweet and  the apples and carrots give it a nice crisp and crunchy texture. We love this as a side dish with dinner or will just grab a bowl as a snack.

As always there are many variations of this recipe and half the fun of cooking is adjusting and adding things in to make it your own. Some people use pineapple instead of the apple and sometimes chopped nuts are a good addition  if you are in the mood for them. My friend adds sweet shredded coconut to hers which is really good for a change sometimes. I get creative with additions sometimes, but there are those times when I am in the mood for just plain old carrot salad.

The hardest part of this recipe is grating the carrots and that is  so easy with a food processor. Here is a nice Hamilton Beach 70730 Bowl Scraper Food Processor at a good price just in case you might need it for this and other recipes. I love my food processor. It is a kitchen tool I use almost every day.

Here is what you will need to make this Quick and Easy Carrot Salad Recipe:
½ cup golden raisins
1 pound carrots
1 tablespoon freshly squeezed lemon juice
¼ to ½ cup mayonnaise (can vary by taste or ingredient bulk)
3 tablespoons sugar
½ teaspoon salt
1 large cup diced fresh apple (I use Honey Crisp)

INSTRUCTIONS:

  • Grate the carrots in a food processor with the grating blade.
  • Place the grated carrots in a medium bowl, add the lemon juice and toss.
  • Whisk together the mayonnaise, sugar and salt.
  • Pour the dressing over the carrots and add the apple and raisins and toss.
  • Cover and refrigerate for at least 3 hours.
  • Serve and Enjoy!

Chocolate Mousse Poke Cake

This Chocolate Mousse Poke Cake is not so much a recipe as it is a delicious way to use the cake mixes and pudding we get from our coupon shopping.  As an avid couponer I always have an abundance of cake mixes and pudding in the pantry, so I am always finding fun new ways to use them. This is a super quick, easy and frugal dessert to make. The guys love this. It is pretty light and easy to eat. I garnish mine with whipped cream and a cherry, but it certainly can be changed up to add whatever it is that you and your family enjoy. I think next time I might add some chopped nuts to the top of mine. I might also try one with yellow cake, vanilla pudding, bananas or some other fruit, and Cool Whip topping.

Here is what you will need to make this Chocolate Mousse Poke Cake:

  • 1 boxed cake mix (prepared as directed on the box)
  • 2 boxes chocolate instant pudding, 3.9 ounce
  • 2 boxes instant chocolate mousse mix, 3.2 ounce
  • Whipped Cream for garnish (optional)

See the packages for exact measurements of these items as they may vary by brand:

  • Milk for the pudding and mousse mixes
  • Eggs for the cake mix
  • Oil for the cake mix

This is the Chocolate Mousse I used for this cake:

INSTRUCTIONS: 

  1. Bake cake as directed on package.
  2. Let cool slightly.
  3. Poke holes in the cake with the end of a wooden spoon or whatever you have about that size.

4.  Mix the instant pudding mix as directed on the package and just as it reaches the soft set stage, pour it over your cake spreading with the wooden spoon to help it get down into the holes. Some of it will stay on top. That’s  okay.

5.  Mix the mousse according to package directions and spread it on the top of your cake like you would frosting.

This Chocolate Mousse Poke Cake is not so much a recipe as it is a delicious way to use the cake mixes and pudding we get from our coupon shopping. This is a super quick and easy frugal dessert to make.
Ingredients
  • 1 boxed cake mix (prepared as directed on the box)
  • 2 boxes chocolate instant pudding
  • 2 boxes instant chocolate mousse mix
  • Whipped Cream for garnish (optional)
  • See the packages for exact measurements of these items:
  • Milk for the pudding and mousse mixes
  • Eggs for the cake mix
  • Oil for the cake mix
Instructions
  1. Bake cake as directed on package.
  2. Let cool slightly.
  3. Poke holes in the cake with the end of a wooden spoon or whatever you have about that size.
  4. Mix the instant pudding mix as directed on the package and just as it reaches the soft set stage, pour it over your cake spreading with the wooden spoon to help it get down into the holes. Some of it will stay on top. That's okay.
  5. Mix the mousse according to package directions and spread it on the top of your cake like you would frosting.
  6. Cut, Garnish, Serve and Enjoy!

This Hot Honey Vanilla Milk is one of our favorite cool weather drinks. I love to curl up on the sofa with a good book and a big mug of hot honey vanilla milk. It is the perfect alternative to hot chocolate. I love hot chocolate, but sometimes don’t have any in the house or just don’t feel in the mood for chocolate. On days like that this really hits the spot. Hot Honey Vanilla Milk is an old recipe that my grandma and dad used to make for us when we would get home from school or come in from playing outside on cold winter days. It brings back many fond memories. It is so easy to make with ingredients we normally keep in the house. Just heat the milk (don’t boil) and add the honey and vanilla, sprinkle with cinnamon, and top with whipped cream. How easy does it get. Hope you enjoy it as much as we do.

Here is what you will need to make Hot Honey Vanilla Milk:

  • 1 cup/mug of milk
  • 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • dash of cinnamon

This Cheeseburger Slider Bake is one of those recipes you need to forget about your diet for a day and just enjoy your food. I have a weakness for anything close to a cheeseburger and the buttery, mildly sweet and tangy sauce on top of these just put them over the top for me. I have the attitude that if I am going to cheat on my diet it has to be something really good. Well I cheated on my diet to eat this and boy was it worth it! This cheeseburger slider bake is pretty easy to make as a quick meal and if you double up on the recipe it is a crowd pleasing meal for parties or game time.  My guys love this one.

As with all recipes most of the fun is playing around with the ingredients to suit your taste and make it your own.  I use shredded cheddar cheese because that is what I had on hand. I could see making this with many different kinds of cheese. I happen to know it’s pretty good with Swiss cheese on top. Here is what you will need to make this Cheeseburger Slider Bake:

1 pound ground beef
1 medium onion
6 sweet mini peppers, seeded and sliced
1-10 ounce can Rotel diced tomatoes and peppers (I use mild)
2 cloves garlic, minced
Salt and pepper to taste
1 to 2 cups of shredded cheddar cheese (adjust for your taste)

For Sauce:
1 stick butter (½ cup)
¼ cup brown sugar
2 tablespoons Worchestershire sauce (adjust for your taste)

INSTRUCTIONS:

  • Preheat oven to 350 degrees F.
  • Brown ground beef with onions, peppers, garlic, salt and pepper.

Cheeseburger Slider Bake

  • When beef is browned and veggies are translucent mix in the can of tomatoes and peppers.

Cheeseburger Slider Bake

  • Simmer for just a minute or two.
  • Drain meat mixture well.
  • Line baking pan with slider bun bottoms.

Cheeseburger Slider Bake

  • Spread Meat mixture evenly over the top of the bun bottoms.

Cheeseburger Slider Bake

  • Sprinkle cheese evenly over top of meat mixture.
  • Place the bun tops on top of cheese.
  • Place butter, brown sugar and Worchestershire sauce in pan.
  • Melt together over low/medium heat until bubbly.

They are  so good with the comfort of the warm cheese and just the right touch of the buttery garlic flavor on top. These Mozzarella Stuffed Pizza Dough Garlic Rolls also  go great with this Smoked Sausage Potato Chowder  recipe we posted to make a wonderful warming meal on a cold day. They are also going to go very well with the Fagioli I am going to make today (recipe to be posted soon). My guys love nothing better than coming home to a warm house with the aroma of good hearty soup and these rolls. They are so good they can even be made as a light lunch served with warm marinara sauce

Pasta Fagioli soup is bursting with good flavors. The aroma that fills the air leaves you filled with anticipation. You will not be let down with this one. I just made a pot of this Pasta Fagioli Soup last week and they are already asking for it again. This soup goes great with these Mozzarella Stuffed Pizza Dough Garlic Rolls or  this Parmesan Herb Flatbread Recipe we posted. To make it even better you might like to end your meal with this Easy Homemade Cannoli Recipe. When I make these dishes together no one is late for dinner and they all save room for dessert.

I see lots of variations that could be made. If you don’t have Italian sausage on hand you can substitute ground beef with good results. My son prefers the ground beef version. Steps to make Pasta Fagioli Soup Recipe:

  • Remove sausage from casing, separate and crumble as you brown it for about 3-5 minutes in a large stockpot.
  • Remove sausage from pot, drain and set aside.
  • Add olive oil, garlic, onion, carrots and celery to the pot and continue cooking until onion is translucent.
  • Stir the sausage and  the remainder of the ingredients into the pot with veggies.

Pasta Fagioli Soup

  • Bring to a boil, reduce heat, cover and simmer for about 15-20 minutes until vegetables are tender.
  • Add pasta and continue to cook for about 10 more minutes until pasta is tender.
  • If you see you would like your soup a little thinner at this point add some water.
  • Spoon into soup bowls.
  • Sprinkle with grated Parmesan cheese if desired.

Fried Rice

Fried Rice; Frugal, Quick and Easy!

We love Chinese Fried Rice in our house, so this recipe is a big hit. This fried rice recipe is frugal, easy to make and hits the spot when you are in the mood for takeout. It’s made with ingredients we almost always have on hand, especially if we are couponers. Fried rice makes a great meal served with a salad. It is also good as a side dish with meals.  I always try to make more to be sure we have leftovers for lunch the next day, but that is a difficult task with this dish because the guys seem to be able to eat their weight in fried rice!

This recipe is a great way to use up any leftover meat or veggies you may have. It is also a great way to stretch leftovers to get another meal out of it. I use pork from a roast or ribs, leftover chicken or even steak or shrimp. One of my favorite meats to use is leftover Grilled Baby Back Ribs. You can use any veggies you like and have on hand such as peas, corn, carrots, or celery. If I have them I sometimes add water chestnuts to give it a little crunch. If you prefer a vegetarian fried rice saute your veggies in a little olive oil and prepare without adding the meat.

NOTE: One thing to remember about this recipe is that the rice is always better if you make it the night before or early in the morning so it has time to chill. It makes it separate easier and gives it that restaurant quality texture.

Here is what you will need to make this Fried Rice Recipe:

3 slices bacon, chopped
1 cup leftover meat, chicken, beef, pork
8-12 scallions, chopped (one bundle)
2 garlic cloves, minced
3 eggs, beaten
1 tablespoon soy sauce
4 cups cooked rice, cold
1 cup frozen green peas
1 package fried rice seasoning mix

  • Mix seasoning mix with 3 tablespoons of water and set aside.
  • Fry the bacon in a large pan or wok over medium heat until crisp.
  • Add garlic and cook until fragrant, about a minute.
  • Add scallions and cook about 1 minute.
  • Add eggs, cook stirring constantly until scrambled.
  • Add rice, meat, and frozen peas to pan, stirring over heat to separate.

Roasted Fingerling Potatoes

Roasted Fingerling Potatoes Served with Zesty Mustard Sauce!

These roasted fingerling potatoes with mustard sauce make a great side with any meal. The mellow flavored fingerling potatoes go perfect with the zesty flavor of the lemon juice, mustard, garlic and honey in the dipping sauce.  Some of the best recipes are the most simple to make. My mother always quoted “sometimes less is more,” and this is one of those recipes. Simplistic and delicious!

The potatoes are parboiled to make them easy to slide onto the skewers and with the shallots. Grilling or cooking them under the broiler gives the potatoes and onions a nice caramelized flavor. We like to have roasted fingerling potatoes with homemade chicken breast strips. This way we get double use from the mustard dipping sauce. If you happen to be cooking something on the grill you can add the potatoes to finish cooking instead of using the broiler. If you don’t have any skewers in the house roast them on a foil-lined pan. They are also great brushed with butter rather than olive oil.

Here is what you will need to make these Roasted Fingerling Potatoes with Mustard Sauce: 

1 ½ pounds fingerling potatoes
3 Shallots, quartered
1 tablespoon olive oil
½ teaspoon sea salt

Mustard Sauce ingredients:

Roasted Fingerling Potatoes

2 egg yolks
1 tablespoon lemon juice
½ cup extra virgin olive oil
2 teaspoons Dijon mustard
1 teaspoon honey
2 garlic cloves
salt and pepper to taste

  • Place salt, pepper, garlic, egg yolks and lemon juice in blender;  pulse until smooth.
  • With blender running slowly pour olive oil in top opening until thick and creamy.
  • Add mustard and honey.
  • Chill until ready to serve.

Roasted Fingerling Potatoes

  • Boil potatoes for about 5 minutes, just until fork tender.
  • Drain potatoes and dry.
  • Preheat Broiler to high or 500 degrees F.
  • Place potatoes and shallots on skewers.
  • Rub with olive oil.
  • Sprinkle with salt.

Roasted Fingerling Potatoes

  • Cook under preheated broiler for about 10 minutes, turning a few times, until tender.
  • Remove from oven.
  • Serve with mustard dipping sauce.

  1. Place salt, pepper, garlic, egg yolks and lemon juice in blender and pulse until smooth.
  2. With blender running slowly pour olive oil in top opening until creamy and
  3. smooth.
  4. Add mustard and honey.
  5. Chill until ready to serve.
  6. Boil potatoes for about 5 minutes just until fork tender.
  7. Drain potatoes and dry.
  8. Preheat Broiler to high/500 degrees F.
  9. Place potatoes and shallots on skewers.
  10. Rub with olive oil and sprinkle with salt.
  11. Cook under preheated broiler for about 10 minutes, turning a few times, until tender.
  12. Remove from oven, serve with mustard dipping sauce, and Enjoy!

Fried Green Tomatoes Recipe

This Fried Green Tomatoes recipe is one of my favorite treats. When I get a few green tomatoes and time to fry this is a must have in our house. When I was making them today I thought others might enjoy having them added to our recipe collection here on the blog. I make a quick easy sauce from a half cup of mayonnaise and a couple tablespoons of Frank’s Red Hot Ketchup (add more or less to suit your taste). If you don’t have any Frank’s on hand you can use ranch dressing, ketchup and cayenne pepper or hot sauce of choice. Fried Green Tomatoes served with chilled sauce are a tasty combination. Fried green tomatoes go great along side this steamed corn on the cob, smoked brisket or barbecued ribs, and of course our favorite Southern Sweet Tea we posted about

Fried Green Tomatoes 1

  • 3 to 4 green tomatoes (if they are just starting to turn a little orange that’s okay)
  • 1/2 cup self rising flour
  • 1/2 cup cornmeal
  • 3/4 cup milk or buttermilk
  • salt and pepper to taste
  • Cooking oil of choice or bacon grease for frying

 

Steps to make Fried Green Tomatoes Recipe:

  • Mix dry ingredients in medium bowl.
  • Add Milk and mix well.

Fried Green Tomatoes 3

  • Heat about 1 inch of oil in skillet. You want it just hot enough that is sizzles when tomatoes are added, but does not pop. If your oil is too hot cool it down a little and then start cooking.
  • Dip tomato slices in the batter, remove with tongs letting excess batter drip off.

  • Place in the frying pan leaving an inch or so between slices so they cook evenly and are easy to turn.

  • Cook on each side for 2-3 minutes until golden brown and tender, but not mushy.
  • Serve with your choice of dipping sauce.
  • Enjoy!

Fried Green Tomatoes are a Southern Favorite whenever green tomatoes are available to use. They are wonderful served as a side dish, appetizer or afternoon snack. I serve them with a chilled dipping sauce made from ½ cup mayonnaise and a couple tablespoons of Frank's RedHot Ketchup. This can be changed for Ranch dressing with a little ketchup and hot sauce to taste.
Ingredients

Strawberry Dessert Cups Recipe ~ Quick and Easy

This Strawberry Dessert Cups Recipe is one my mom used to make for a quick and easy dessert. It is light, cool and refreshing. Strawberries and dessert cups were on sale at Publix this week and it reminded me I had not had this dessert for a long time. This frugal delicious dessert can be whipped up in a matter of minutes. We always loved these and asked for seconds. Some of the best foods are these old quick and simple things our mothers and grandmothers made for us. My grandmother would make these with biscuits using either homemade or store bought biscuit mix with a little sugar added to give it a little sweet flavor. Those were my favorite and I make them when I have time to mix and bake. These strawberry dessert cups make pretty and delicious dessert to serve with any meal.

As with all recipes most of the fun is playing around with the ingredients to suit your taste and make it your own.  As stated above the berries are really good over sweet biscuits. This is also really good served over slices of pound cake. I sometimes add a little twist by stirring in some raspberries or blackberries if I find a good deal. I also garnish with a slice or two of mango when they are in season and I have picked a few.   • 1 carton (16 oz) strawberries
  • ¼ cup sugar
  • 2 tablespoons water
  • 1 package dessert shells, pound cake or biscuits, your choice

  • Wash and remove tops from strawberries.
  • Slice berries into a small bowl.

Buffalo Chicken Breast Sliders Recipe

This Buffalo Chicken Breast Sliders Recipe is an inexpensive and quick to make dinner for any day of the week. It takes less than an hour from start to the table and is always a hit here in our house. The guys love these Buffalo Chicken Breast Slidersand actually perfer them rather than regular chicken wings sometimes. I serve them with fries, and/or celery and carrot sticks with blue cheese dressing for dipping. If you are not into the fries on the side this would also go great along side this Roasted Cauliflower recipe we posted about. We have found that cauliflower goes great with buffalo wing sauce and many other things. It is very versatile, but more on that in a later post.

Make it your Own

As with all recipes most of the fun is playing around with the ingredients to suit your taste and make it your own. Because I don’t I don’t always have chicken breasts on hand, I have used boneless skinless chicken thighs which are just as good for this recipe.  You can also add a little less butter for a more spicy sauce or a little more butter for a milder sauce.   • 1 cup Louisiana hot sauce
  • 4 tablespoons butter (a little more for a milder sauce or less for more spicy)
  • 3 tablespoons of water
  • 3-4 boneless skinless chicken breasts
  • Blue Cheese Dressing for topping and to dip veggies
  • Salt and Pepper to taste
  • 6-8 Dinner Rolls
  • Celery And Carrot sticks (optional to serve on side)

 

Steps to make Buffalo Chicken Breast Sliders Recipe:
  • Combine hot sauce, water and butter, heat in microwave for about 1 minute to melt butter, stir to mix and sit aside.
  • Heat just a tablespoon of oil in frying pan so when you add chicken it sizzles, but does not spatter.

  • Brown chicken on both sides.

  • Pour sauce over chicken being sure to coat thoroughly.

  • Lower heat, cover and simmer for 30 minutes until chicken is cooked through.
  • Remove chicken to a plate and shred with two forks.

  • Return the chicken to the pan and stir to coat with sauce.

  • Place a scoop of chicken mixture on your dinner rolls or buns.
  • Top with a dollop of blue cheese dressing.
